The medium-sweet red wine Kindzmarauli is made from Saperavi grapes grown in Kindzmarauli area, Kvareli District. The grapes are picked when they are fully ripe (with sugar content no less than 240g/l) and put through a crusher/destemmer. The must received in the process goes to a fermenting thermos vessel with an addition of sulfur anhydride and a pure culture of yeast. Alcoholic fermentation is carried out at temperatures of 23 25C; the pulp is stirred 3 to 4 times a day. When the sugar content in the grape juice comes to 50g/l the juice is drained off the pomace.
Free-run juice is used to make a high-quality Kindzmarauli. By means of a heat exchanger the semi-dry raw wine is transferred to a refrigerator where it stops fermentation. Five to ten days later the wine is decanted off the lees. Prior to bottling, the raw wine is kept in the fridge at temperatures of -2C to -4C.
